Sake Honey Dressing
This bright, umami-sweet dressing is perfect for cold smoked kingfish with cucumber and chives or drizzled over grilled eggplant, seared scallops, or a simple green salad with toasted sesame.
Ingredients (rounded to gram weights)
30g Honey
15g Sake
15g Fresh lime juice
40g Mount Zero Lime infused olive oil
1g Freshly cracked black pepper
2g Lime zest
Flaky sea salt (optional)
Method
Combine the honey and sake in a small bowl. Whisk until the honey is fully dissolved and the mixture is smooth.
Add the lime juice and whisk again.
Slowly drizzle in the lime-infused olive oil while whisking continuously to emulsify the dressing. If you prefer, you can shake all ingredients in a jar with a tight lid for 30 seconds.
Stir in the black pepper and lime zest. Taste and adjust: add a pinch of flaky sea salt if needed, or a touch more honey for sweetness or more lime juice for brightness.
Let the dressing sit for 5–10 minutes to allow the flavors to marry before using.
Serving suggestions
Cold-smoked kingfish with cucumber and chives: Spoon dressing over thin slices of kingfish and cucumber, finish with extra chives and a few nigella or sesame seeds.
Grilled eggplant: Drizzle over smoky slices and scatter toasted sesame and spring onion.
Seared scallops: Use sparingly to finish scallops for a citrusy, sweet glaze.
Crisp green salad: Toss with mixed greens, cucumber ribbons, and toasted almonds for crunch.
Storage Keep refrigerated in an airtight container for up to 3 days. Shake or whisk before using if separation occurs.
